MANGO!

No, not that kind. Today I’m talking about the yummy and beneficial fruit you can add to your salad to create a light yet filling summer meal – it involves no cooking, little time, and it’s delicious!

Mangos carry huge benefits, such as preventing cancer, promoting eye health, boosting memory, and boosting sex drive (move over, oysters,) so you can feel great about devouring this meal. Oh, and don’t forget the amazing benefits mango has on your skin. Scroll down for the salad recipe, a simple dressing recipe you can whip up in seconds, and a quick and easy recipe for your skin.

Healthy Mango Salad

You’ll need:

Lettuce (I usually get a head of red leaf, and a head of romaine)

2 mangos

2 carrots

1 bunch of grapes

1 handful of blueberries

Rinse, chop, toss – done. *Tip: for the carrots, get out your peeler, and once the skin is off, keep peeling the carrot so that you get thin strips rather than cut chunks or circles.

For the dressing:

1/3 cup balsamic vinegar

2/3 cup Olive oil

1 tbsp dijon mustard

1 tbsp fresh herbs, your choice (or 1 tbsp Italian seasoning)

1/2 shallot, chopped

1 clove garlic

Toss all ingredients into a Magic Bullet or other food processor for about a minute, and serve.

Mango Skin Treatment

1/2 cup fresh mango juice

1 tsp honey

1 cup rolled oats

Mix three ingredients together, apply it to your face and neck in a gentle circular motion, and rinse off after thirty minutes. The honey retains moisture in your skin, while also absorbing any impurities, which makes it a great treatment for acne; the mango is rich in beta carotene, making it a powerful antioxidant which increases your cell turnover and protects your skin from free-radical damage; and the oats provide a gentle exfoliation for your face. Talk about a fruit with benefits…enjoy!
