Lazy Cucumber Salad

I call this one “Lazy” Cucumber Salad because that’s exactly how I felt before I threw it together. Didn’t feel like cooking, didn’t want to spend time preparing anything, and hungry as hell.

Luckily I found a giant cucumber in the garden that was ripe for the pickins’…

There was a small bunch of cherry tomatoes that were ready to go, too. These, plus an about-to-go-bad log of goat cheese were the basis of my side dish. I don’t call them “Monday Night Mash-Ups” for nothing. Below are the ingredients I used and it came out delicious, but you can improvise with what you’ve got going on in your fridge:

2 cups cherry tomatoes
1 large cucumber, diced, seeds removed
2 tbsp crumbled goat cheese
1 shallot, minced
1/4 cup good quality balsamic vinegar (my favorite is a traditional flavor that came from Pour in Charlotte)
2 tbsp parsley/oregano
s & p to taste

Add all the ingredients together in a bowl, give it a good stir, and serve. Looks great, tastes great, and you’ll have plenty of time to take a nap when you’re done!

Oh my freakin’ gosh this looks absolutely divine!! Haven’t had goat cheese in a while and I’m literally drooling at …oh yes, 11 pm at night haha…Love it…and you’re right it looks beautiful too! Definitely adding this to my “Ali’s Cookbook” printed folder of your wonderful recipes in my kitchen 🙂
