Who says dinner has to be a big ordeal? Some of my favorite types of dinners are the ones that involve a few different “picky” foods rather than a full meal. On a busy Monday this type of meal seems to work out even better. Here is my recipe for the most simple, kick-ass guacamole you will ever taste – and the best part is, no blender required! All the ingredients are fresh and delicous. *This recipe is compliments of Cantina, with a few tweaks from yours truly. Feel free to click the link and turn your volume up ;)* Now pour yourself a margarita, shake your maracas and start the week off right.
3 ripe avocados
1 diced tomato
1 diced shallot
1 serrano pepper, minced (2 if you’re feeling frisky)
1 bunch chopped cilantro
3 garlic cloves, minced
juice from 1 lemon and 1 lime
sea salt to taste (or table salt)
Halve the avocados and place a mixing bowl. Add all other ingredients on top. Grab two forks, one for each hand, and get in there and mix everything together – the avocados will be soft enough and this will blend perfectly. Now grab some chips and enjoy! And if you like, raid your fridge for some cheese, sprinkle it on top of some nachos and zap them in the microwave before dipping in the guac. **Tip: If you made too much guac and want to save some for later, stick a few slices of lime in the bowl – it will keep it from browning up and help it stay fresh.**

That’s a great list. My wife and I try to buy local as much as possible. We’d like to buy more organic, but it’s so expensive. We take advantage of the farmers market and have our own garden, so that helps too.

Do you guys know if it’s ok to eat Guacamole when it’s turning brown? I heard it’s no big deal, but i don’t want to take any chances…
Beware of the brown guacamole! If you eat it you will have bad luck for 5 years! Kidding, of course 🙂 You can, (although the taste changes a bit), but I would only eat it after a day of turning brown. Anything after that and I’d make a fresh batch.
