A Quick Caprese Salad with Pesto

Instead of serving caprese salad the traditional way – sliced tomatoes, fresh mozzarella, basil, and balsmic – finish it off with a drizzle of pesto. I had this at a restaurant recently and it was delicious!! There are lots of ways to make a pesto sauce, but here’s my tried and true quick recipe…

Ingredients

1 cup good quality olive oil
1/4 cup pine nuts, lightly toasted (sometimes I use pistachios instead)
1/2 cup fresh torn basil leaves
2 tablespoons grated pecorino romano cheese
s&p to taste

Toss all ingredients in a magic bullet (or other food processor.) Blend well. That’s it! Serve it over pasta, with warmed bread, or in this case, drizzled over a caprese salad. Buon Appetito!

Hi Lori! Thanks so much for mentioning me, I hadn’t gotten to read it yet so it was a nice surprise!!! I have to also tell you, on another note – I received my terra cotta pendant and oh I am OBSESSED with it!! I love it! What a cool idea – seeing it in person is even better. I’m all about the accessories so the fact that I could wear this and also benefit from the aromatherapy is a win-win for me…just thought I’d share 🙂

I am experimenting – the first one I got is a blend. “Mellow Mix” I want to say…it has Bergamot and lavender – does that sound right? Thanks Lori – I am totally going to have questions for you soon!! 🙂
